The ForeverFit Inc. #FITNESSFLASHMOB series for 2013 is here!!! We’re going to kick it off Saturday, June 15th at LOVE Park in Philly at 10AM! It’s a FREE event so all are welcome to join us take over Center City for the first #FITNESSFLASHMOB of the summer! The format for this year’s #FITNESSFLASHMOBS is a little different. Can’t say how just yet, but I encourage you all to bring workout gloves. The workout will be filmed and official #FITNESSFLASHMOB t-shirts will be on sale prior to starting the workout so the cameras can capture a real MOB getting it in!

Lentils have become a staple in my diet. They are are a hassle-free addition to any meal- which is what I tend to lean towards when cooking. Low in calories and high in nutrients and flavor, lentils are the perfect add-on to salad or make for a great side dish. Lentils are high in fiber, protein, minerals and vitamins and are virtually low in fat and calories.
Take a look at one of my favorite Asian inspired lentils dishes below.
Ingredients
¾ cup washed and drained green lentils
3 cups organic low sodium chicken or vegetable broth
2 cups water
1/4 cup scallions
1 cup shredded carrots
1 cup edamame, thawed
¼ cup sliced red bell peppers
¼ cup sliced yellow bell peppers
For the dressing
2 tablespoon sesame oil
1/2 teaspoon spicy chili oil
1 lime juiced
1 garlic cove minced
3 tablespoon
½ teaspoon freshly grated ginger
½ teaspoon freshly ground pepper
¼ teaspoon freshly grounded sea salt
Place lentils and 3 cups of broth into a small pot. Reduce heat, cover and simmer until tender. Drain if needed and add to bowl. Bring 2 cups of salted water to boil, add edamame for 1-2 minutes. Drain under cold water. Pat dry and add to bowl with lentils. Add sliced red and yellow bell peppers, scallions and shredded carrots to the bowl.
Mix ingredients for dressing together. Pour dressing over lentil and vegetable mixture, mix well. Serve room temperature.
*If I don’t have time I use Trader Joe Steamed Lentils- they work just as well. I tend to not add additional salt if I use these lentils.
Take a step back when faced with the act of making a decision and think about whether or not this decision will be telling of your character and adequately tell your “story.”
